Asparagus:  An amazing food for so many reasons!

I hope you are already in the habit of adding asparagus to the menu in your home.  If not, let me tell you a few reasons why it is a good addition:

  1. It is full of fiber that makes it through the GI tract and into the large intestine where it feeds the good Probiotics.
  2. Iron rich. One cup will provide 10% of your daily needs.
  3. Full of Vitamin K, which helps with bone repair by activating proteins that bind calcium to bone tissue.
  4. Asparagus is full of Folate, which is an essential nutrient for cellular repair.

Asparagus is a fragile vegetable, and must be handled with gentle heat.   You do not want to cook it too fast or at too high of heat.   Sauté is preferred, with steaming being another good way to prepare it.  Normally, 4- 10 minutes is sufficient to get crisp tender stalks.

To make this vegetable even more nutritious, add butter and a dash of lemon.   This will make the nutrients more absorbable, and will add even more deliciousness to your table.
